About the product
In Abruzzo, in the center of Italy, it was customary, at the end of the olivades, to degrease the millstones by crushing lemons in them. The oil obtained, very fragrant, was reserved for family use.
Today, this process continues to be used, no longer at the end of the harvest but on the contrary at the start of the harvest when the olives are very green and the citrus fruit very fresh. The olives, like the citrus fruits, are rigorously selected from the orchards and olive groves of the Ursini family.

Gourmet pairings: To be used as a marinade on seafood, noble fish, salmon or tuna tartare. As a dessert on fruit salads or fruit tarts.
