This Collection is designed to show the diversity of olive growing in Provence. From the early harvests of green olives (Fruity Green), to black olives (Fruity Mature), to the late harvests where the mill allows the olives to ripen a few days before pressing them, as our elders used to do in Provence (Fruity Black), ORGANIC, PDO or Huile d'Olive de France designations. We have selected this Collection from among 20,000 producers and 180 mills that represent the Provençal territory.

The PDO oil from Provence label guarantees inimitable quality, according to a know-how which is transmitted from generation to generation. Pressing is generally carried out a few hours after harvesting in order to preserve the full flavour of the olive.
