Dyade olive oils

A Dyad harvest allows a single fruit to taste rich flavors, depending on whether the harvest takes place in early or more distant manner. The climate, the nature of the soil, the variety of the fruit allow a singular alchemy and to discover an equally exceptional oil.

La Dyade is first of all the story of a new and very rare variety of olive: the Sikitita, the fruit of the crossing of the Picual and Arbequina varieties. This variety enjoys early ripening. It is in mid-October that the first harvest takes place, making it possible to obtain an oil with a fruity green, herbaceous and emerald color. The second harvest, mid-November, will bring a rounder oil, with more marked and ripe flavors.
