Saragolla is an old variety of durum wheat mainly grown in central and southern Italy. This local variety of wheat descends from the wild Emmer which is the first cereal used by men as food, it has a high protein content.
The pasta is made in bronze molds (Trafilata al bronzo) which alone allow the pasta to absorb the sauces and olive oil well. The drying is done at low temperature in order to preserve all their organoleptic qualities. It is a long and very meticulous work that the Italian know-how offers us in sharing.

And products using chemical fertilizers and herbicides that are harmful to human health and the environment. This is our idea of a model of consumption and sustainable development: one that protects biodiversity, enhances the genetic resources of our agri-food heritage and where we put people first and foremost at the center.
