Vinegar made with natural and strong sweet wine from the Banyuls region.
The wine is made from Grenache Noir, Grenache and Carignane grapes. It is stored on wooden floors outdoors, in all weather conditions and oxidized for 4 years. In this way, the wine becomes wine vinegar before being stored in oak barrels for the fifth and last year. Vinegar must have a minimum of 6% acidity.
The vinegar has notes of nuts, spice cake, vanilla, licorice with a slight sweetness. Banyuls vinegar is not as sour as red wine vinegar.
