Assortment of shortbread biscuits

It is to the Marquise de Sablé, woman of letters of the 17th century, that we owe this little round biscuit, adopted by the court of King Louis XIV and made from flour and butter and in which we will add lemon, almonds and other ingredients that vary by region.

The wheat used comes from regional cereal producers who do not use any pesticide or insecticide treatment. the flour milling is carried out at the Stéphane Pichard mill, miller for 7 generations and located in Haute-Provence.

These shortbread cookies with 3 flavors: almond, candied fruit and lemon zest & verbena, are produced at the Forcalquier biscuit factory located in Haute-Provence, in a former 19th century industrial building.

Ingredients: wheat flour, sugar, butter, gluten-free flour (rice flour, buckwheat flour, psyllium), eggs, butter semi-salted, almond powder 5%, grilled almonds 5%, candied fruit 3% (orange peel, cherry , lemon peel, pineapple, glucose syrup, water, cane sugar, concentrated lemon juice), lemon zest 1%, olive oil, Camargue fleur de sel, natural flavor, lemon verbena 0.1%, lemon verbena essential oil <0.01%.
