4 kg of very green olives picked by hand at the beginning of October last year yield only a 1/4 of a litre of oil! This concentrated Ultra Green oil was harvested by our company in the olive grove in Sainte Tulle in Haute Provence and then pressed in Volx.
Just a drizzle of oil with Camargue fleur de sel salt to eat with your future tomatoes. Pure pleasure!
Green fruity aromas of tomato, artichoke, banana peel, avocado on the nose. Fluid and sweet entry, slight bitterness. Less fragrant on the palate, always green, nutty fruit skin, Final light spiciness - throat to the tip of the tongue - Texture: some sweetness in the mouth like velvet. Beautiful oil picked at its optium moment of maturity.
Food pairings: curry or spicy dishes, artichokes, eggplant, sweet potatoes, onion pie. Watercress, tomato salad.
