In Abruzzo, in the centre of Italy, it was customary, at the end of the olivades, to clean the millstones by grinding lemons. The oil obtained, very fragrant, was reserved for family use. Today, this process continues to be used, no longer at the end of the harvest but on the contrary at the beginning of the harvest when the olives are green and the lemons are fresh. Both olives and lemons are carefully selected from the Ursini family orchards and olive groves.
Giuseppe, the son, who took over the two hundred year-old family company, is in charge of finding the perfect balance each year, at the time of the olivades, to obtain this extra virgin olive oil with fresh lemon.
Food pairings: Will subtly liven up fish marinades, shellfish, sushis, salads, white meats, fruit salads and sorbets.
