In Abruzzo, in the middle of Italy, it was customary, at the end of the olivades, to clean the millstones by grinding lemons. The highly fragrant oil obtained was reserved for family use. Today, this process is still used, no longer at the end of the harvest but on the contrary at the beginning of the harvest when the olives are green and the lemons are fresh. Both olives and lemons are carefully selected from the Ursini family orchards and olive groves.
