The "Gibassier" is a crunchy cracker-type short-crust biscuits. it is made from artisan organic farmhouse flour and is sprinkled with chunks of dark chocolate.
This is a biscuit which can be eaten all year round and can be shared after being broken. It is traditionally one of the thirteen Provencal Christmas desserts.
Located in Haute-Provence, in a 19th century former industrial building at the entrance to the town of Forcalquier, the Biscuiterie de Forcalquier makes all its products from naturally low-gluten artisanal flours from organic farming.
Biscuit making workshops open tot he public are open from the Spring to the Autumn.
