Over the centuries, the "citrus limon" acclimated to Menton has become a botanical variety in its own right. Its fruit has a number of characteristics that are unique to it: a very bright golden yellow colour, a rind very rich in essential oil, a thick "albedo" (white part of the fruit) that keeps a lot of juice in the pulp, and a sweet and fresh fragrance.
Solange Telme makes her terrines in Haute-Provence as her family has always done since 1947. They are filled with a fork to put quality before productivity. All their ingredients (with the exception of certain spices) are of French origin. Prepared without colouring agents, flavour enhancers or preservatives.
Food pairings: To be enjoyed as an aperitif on fresh bread or slightly toasted on black bread as an accompaniment to salads.
