‘Taralli’ are ring-shaped savoury cocktail biscuits made from wheat, white wine, extra virgin olive oil, yeast & salt. Tradition has it that ‘Taralli’ were the favourite afternoon snack of farmers in the south of Italy, who used to eat them in the fields. Today, thanks to the health benefits provided by these biscuits, they have become a staple in the Mediterranean diet and often replace bread on Italian tables.
They are a speciality of southern Italy but we found the best in the region of Apulia...
The real difficulty in obtaining golden, crunchy taralli is in the recipe which must be as simple as possible with quality ingredients, but also in their baking which allows them to keep their crumbly crunchiness. These Taralli are entirely hand-made from measuring the ingredients to shaping into a biscuit, following the old recipes handed down and kept secret for generations.
