Noëlle Bittner has two addresses. In Paris, she writes great reports and enjoys city life. In the south, his address is the domaine de l'Héraude, discovered six years ago in the heart of the forest. An agricultural estate abandoned for so long that the soil is like new today: without the slightest trace of fertilizer or pesticides. With Thomas, her husband, she has created an olive grove where every detail is thought out with a taste for ancient gestures. To make manual harvesting easier, Noëlle made large aprons with kangaroo pockets. This way, the pickers do not use a comb because she prefers to avoid shaking the trees and injuring the olives.
